'Immortality' always comes with a price, and everything can be destroyed.

A straightforward answer but a good one. Humans are only meant to live for a century or so, any longer then that and they tend to go a little nutty.

Well there stands the point that many non-humans and other oddities are born with indefinite life spans and can cope with it.

Coping does not automatically include maintaining one's sanity. It just implied a less destructive lack of sanity than what humans and other non-humans with what is colloquially referred to as 'mortal' succumb to.

Ennui is a common example.

Also quite true. Living long enough one tends to do and see their fill of things and boredom sets in.

No, they aren't. The dead can always be brought back in some manner. Those with their existence destroyed are gone forever.
